Biography

​Having completed the Culinary Arts Essentials program in Meudon in 2022, Noel's journey has taken him to the prestigious position of Head Chef at Shady Island Restaurant and Bar in Vancouver, Canada. Driven by a desire to educate and empower the next generation of culinary professionals, Noel envisions himself as an educator. By enriching his own knowledge and understanding, he aspires to guide aspiring chefs through the dynamic landscape of cuisine and culinary work. His passion lies in reinvigorating appreciation for cookery in the modern era, fostering an understanding of the intricate process that brings food from farm to plate. Through education, Noel aims to address various issues plaguing the food industry, such as food waste, supply chain difficulties, public health concerns, and the decline of domestic culinary practices.​

Choosing Ecole Ducasse was a natural decision for Noel, driven by the institution's stellar reputation for delivering top-quality culinary training. The experience provided him with invaluable insights into French kitchens and enabled him to compare different work cultures. He marveled at the Europeans' profound appreciation for food and its preparation, which sometimes stands in stark contrast to the North American approach. “My experience at the school was very eye opening. I could have a very good view of a lot of things, and I think I would do it again and again and again…”​
