Biography
Hailing from the Irish countryside, Cliona's culinary journey began at a young age when she discovered her love for baking. As she grew up, her fascination with food and cooking led her to explore the art of pastry-making, ultimately becoming the driving force behind her career. Currently she is the Store Manager of Le Choux in Notting Hill, where she manages daily store operations. Eager to gain operational expertise in running a small patisserie, she transitioned to her managerial position, envisioning her own successful and unique patisserie establishment in the future.
Driven by a profound passion for pastry and a desire to master essential French techniques, Cliona embarked on her studies at Ecole Ducasse. Recognizing the school's esteemed reputation and the opportunity to learn from the best in France, she chose to pursue her culinary education there. At Ecole Ducasse, Cliona honed her skills and acquired in-depth knowledge of fundamental techniques that form the backbone of patisserie. The detailed and well-organized classes provided her with invaluable insights and comprehensive training across various areas of pastry-making.
