Hugo Minesi obtained his CAP Pâtissier, then continued his training in Dijon with a vocational baccalaureate and an additional qualification. He honed his skills at Pierre Hermé, obtaining his Brevet Technique des Métiers, then at the Royal Monceau, where he earned his Brevet de Maîtrise. After gaining experience in Norway, he moved to Switzerland and won the Swiss Pastry Cup 2022, qualifying for the International Pastry Trophy. In 2024, he joined the ENSP as a training chef.
